Breakfast Burgers



An interesting breakfast burger created from mashed potatoes, stuffing mix, eggs, and thick cut bacon.

Ingredients -

1 small package Instant Mashed Potatoes
1/2 package Dry Sage and Onion Stuffing
4 slices Thick Cut Bacon, cooked crisp and crumbled
1/4 cup Unsalted Butter
4 Large Eggs
Salt, to taste
Fresh Ground Black Pepper, to taste
2 tablespoons Whole Milk
 
Preparation:

1. Prepare potatoes according to package directions.
2. Add stuffing and bacon piece to the mashed potatoes. Stir to combine.
3. Divide mixture into four equal balls. Shape each ball into burgers.
4. Add 2-tablespoons butter to large skillet.
5. Sauté burgers until golden brown and cooked through, turning once.
6. Stir salt, pepper, and milk into eggs.
7. Add remaining butter to small skillet
8. Melt butter, scramble the eggs.
9. Top each burger with scrambled eggs.
